Rachi is on the top of a hill three and a half kilometers before Gythio of Laconia, Taygetos lies on its west, Parnon to its north and on the east and south is the Laconian Gulf.

The fertilization strategy on our biological olive groves targets the productivity improvement of the soil through a regimen that ensures long-lasting upgrades of texture, structure, and a simultaneous fertility increase.
This regimen is primarily based on the application of "green manuring" with faboideae, gramineae, or mixtures, the addition of organic material compost, as well as animal manure exclusively from our biological farming livestock.
Pruning an olive tree is a real art form. It shapes the branches, allowing air and sun to reach the crop. We prune every tree separately, depending on its particular needs. This is why every one of our trees has its own productive story to tell through its shape.
We proactively take appropriate protective measures to prevent infestations on our olive trees. Oil tree infestation is the most serious problem for oil production in Greece and all Mediterranean countries. The damage to fruits is the reduction of the resulting oil's quality and as a result a higher acidity.
The harvesting of our olives begins in early October and completes when the fruit is still unripe and green. The olive oil that results from unripe green olives contains hight quantities of aromatic ingredients and is rich in polyphenols. In contrast, as the olive fruit ripens, its color blackens and the quantity of aromatic ingredients is diminished along with the polyphenol content.
We begin producing the olive oil mere hours after harvesting and always within the same day. With cold pressing in low temperatures under 23º C, using water sparingly, and a maximum pressing duration of 40 minutes.
Our Biological Extra Virgin Olive Oil is stored in stainless steel containers and after 3 months of natural sedimentation, it's bottled unfiltered. In this manner, the high nutritional ingredients of the olive oil are preserved.

Our Extra Virgin Organic Olive Oil of 2022-2023 harvest is characterized by really low acidity, antioxidant properties thanks to a high content of polyphenols and vitamin E, its vividly green color, its moderately spicy and bitter character, and the freshly harvested aromas of the olive fruit. Our olive oil was awarded the BRONZE award in the global competition "The Olympia - Health & Nutrition Awards Committee" for the year 2022-2023.
